I hosted a playdate the other day and wanted to create a quick and easy spread of delicious but nutritious foods for everyone to enjoy. I always like to include some type of baked good when hosting these things, mostly because I love to bake but also because baked goods are always a hit. Instead of baking my typical banana bread or green goblin muffins (which is actually the perfect treat for this time of year), I decided to try something new: Zucchini Brownies.
I mean, what kid doesn't love brownies?!?
This recipe was a HIT! The kids loved them and the moms felt good knowing their kids were fuelling themselves with nutrients. It was truly a win-win.
Other foods I served (I wish I took a picture!): strawberries, blueberries, raspberries, carrots, celery, tomato, bell peppers and pretzels. It was a simple but colourful medley!

Zucchini Brownies:
Ingredients:
1 cup Almond Butter
1.5 cups Peeled and grated zucchini (remove excess water to prevent brownies from being soggy)
1/3 cup Raw honey
1 Egg
1 Tsp Vanilla
1 Tsp Baking soda
1 Tsp Cinnamon
1/2 Tsp Nutmeg
1/2 cup Dairy free chocolate chips
Directions:
Preheat oven to 350 degrees.
Combine all ingredients into a large bowl and pour into greased 9x9 pan.
Bake for 30-35 minutes until toothpick comes out clean.
