The Best Banana Bread You'll Ever Try! Kid and Husband Approved!

It has been a hectic few months between finally getting childcare organized for my daughter and increasing my patient load, it's been hard to find time to write. I have so much information I want to share and I admit, I have to get better at finding time to share it. Note to self - New Years Resolution.


This weekend, I decided to try baking a new banana bread recipe with my girls. We have been potty training my almost 3 year old and have been spending lots of time at home, so I figured it was the perfect activity.


Turns out, it was the best banana bread we've ever made!

And that's a big statement because we LOVE to bake banana bread. This is another favourite recipe.


What I love about this recipe is that it's gluten-free, dairy-free and sugar-free. It was simple to make and everyone could enjoy it - even my 9 month old. I ended up baking a second batch and sent it to work with my husband and all of his colleagues couldn't believe it was free, free, free of all the things because because it was so delicious! Talk about a compliment!


I wasn't planning on blogging about this recipe but my family insisted.

Healthy Banana Bread

Ingredients:

  • 1/3 cup avocado oil (or melted coconut oil)

  • 1/2 cup organic maple syrup or honey

  • 2 eggs

  • 1 cup mashed ripe bananas (2 large bananas)

  • 1/4 cup dairy free milk (we used Silk Unsweetened Vanilla Almond Cashew milk)

  • 1 tsp organic baking soda

  • 1 tsp organic vanilla extract

  • 1/2 tsp salt

  • 1/2 tsp organic ground cinnamon

  • 1 3/4 cup all-purpose gluten free flour

  • Optional: dairy free chocolate chips, walnuts, etc. (I added some dairy free chocolate chunks to the top of one side for those who want a little hint of sweeteness)


Instructions:

  1. Preheat oven to 325F and grease a 9x5 inch loaf pan

  2. In a large bowl, beat the oil and maple syrup/honey together with a whisk. Add the eggs and beat well, then whisk in mashed bananas and milk.

  3. Add the baking soda, vanilla, salt and cinnamon and whisk to blend. Lastly, switch to a spatula or big spoon and stir in flour, just until combined.

  4. Pour batter into your greased loaf pan. Bake for 55-60 minutes or until a toothpick inserted in the centre comes out clean. Let bread cool in the loaf pan for at least 10 minutes.
